Caterer and Licensee
Student Chef of the Year 2007


Carla Allen is part of the choices project based at the Tudor lodge restaurant in Jameston delivered by PRP-Training Ltd. She is following a catering course led by tutor and head Chef Jamie Bessant. Carla attends one day a week through a vocational placement by the behaviour support service based in Neyland. She was entered into the competition after winning the PRP-Training Ltd choices young chef of the year 2007.

For the first round she was required to produce a 3 course meal with costing for 4 covers that didn’t exceed £8 per person and the food she was producing also had to be suitable for a gourmet dinner for 200 people.

Carla’s menu was selected for the final, which was held in the Hotel & Catering show at the Bournemouth International Centre on the 6th of March 2007. Here, she had to produce 2 portions of her chosen menu, selecting 2 of the courses that she designed in 40 minutes.  

During the final Carla had decided to produce the chicken stuffed with a mushroom farce on a bed of creamed leeks and the dessert was white chocolate truffle torte with berry compote. Carla cooked her dishes to a high standard and coped very well under pressure and with an audience of around 80 people watching every move she made. She cooked her dishes on time for the judges to taste.

 


Carla was up against students who are studying N.V.Q level 3 on a full-time catering course. Carla is following City and Guilds entry level 2 which is an equivalent to a G.C.S.E catering qualification. This just goes to show what kind of standard she was up against and by no means was she out of place. This demonstrates how hard she has worked to get to that sort of competition standard. Carla was also the only student from Wales in the Competition.

 


All of the students in the final worked hard and were well organized. It was Jess and Carla’s first cooking competition and they showed no signs of nervousness.



After two hours the judges announced the winner. Unfortunately, it wasn’t Carla but one of the judges was amazed by how this 16 year old had the courage to perform in front of all those people and still be able to produce food at that the level she did. Her catering tutor and head chef Jamie Bessant said that he was proud of her and that she is able to hold her head up high as she had performed exceptionally.


Carla can now take this achievement of being a finalist at a major catering competition and build on this experience for the future or for the next competition she decides to enter.
